starting all on seashells and marzipan and developing on a rather subtle combination of slight slightly overripe apples

Not far from absolute aromatic balance

with hints of nuts and cinnamon

goat’s cheese (‘Crottin de Chavignol’)

The grape solids and barrel ferments add nice savoury notes and minerality

orange and orange blossom

but nicely toasted

the whisky reveals an almost culinary quality reminiscent of white chocolate panna cotta
